What do you do when you are trapped in a seemingly never-ending winter?

Well, in this case, when life gave me lemons…

Six lemons and a zester.

I made lemon pound cake.

Five mini-loafs of glazed pound cake.

And it turned out pretty good, if I do say so myself. And I do. (Thank you Wendy at The Monday Box for the recipe.)

  1. Hi Christie – we never get extreme weather like yours – just cold and wet and fairly miserable in the middle of winter. I can’t even begin to imagine all that snow in the yard – it’s so pretty (but I don’t have to live with it!) Your lemon cakes look amazing. It’s Autumn here and the weather has been just beautiful (sorry!) and I’m out and about in it as often as possible before the winter rains set in and make it less appealing. I hope you get some warmth and sunshine soon. x

    1. The snow really is beautiful, Leanne. Sometimes it’s hard for me to remember that at the end of a long winter. However, today, the contrast of the blue sky and the white mountains in the distance took my breath away. I am glad you are enjoying the pleasant autumn weather. We are expecting more spring-like weather next week. Fingers crossed!

  2. Christie, Old Man Winter just refuses to lie down and go to sleep in your part of the country. Looks like you are making the best of it through. Those are some nice looking lemon cakes.

    1. So true, Suzanne, but the forecast is calling for more spring-like weather next week, so I am keeping my fingers crossed. I was pleasantly surprised at how nice the lemon pound cake turned out. I don’t have a lot of baking experience. I was even confident enough to share the final product, which made the mini-loafs perfect.

  3. I’m a “stay inside in sweats and a hoodie” kind of girl when it’s cold. Mark makes a delicious lemon Bundt cake. (Yours looks really good too.) And the last book I read was Small World by Jonathon Evison. It was good.

    1. I’m with you Cindy in regards to staying indoors when it’s cold. Hopefully, we are done with that for a little while. I remember Mark bringing us lemon blueberry bundt cake. It was divine! I also liked Small World.

  4. I understand about the weather extremes. It was near 80ºF yesterday and is predicted to be in the mid-30s tomorrow night. Our pansies are giving me the side-eye.

    My favorite lemon recipe is making lemon curd. I love the stuff. However your pound cake looks amazing.

    1. It’s so crazy when the temps do that up and down in spring. I saw some ice-covered buds on our tree. That can’t be good. The sun is shining today, though, so I won’t complain. I’ve never made lemon curd, but I do like it, so perhaps I should give it a try.

  5. Your photo looks very cold Christie. We don’t have snow where I live but it does get very cold in winter. Today is Good Friday and we have a very cold and very wet day. On a very cold day, I would rug up and walk with my dog, as he’s insistent that we do it every day. If it was a day of work as today is, I would then snuggle up with a book and perhaps spend some time on my blogs. Your lemon cakes look so yummy. I went to the recipe and will definitely give it a go as I love anything with lemon…and I love cake.

    1. It has warmed up slightly here, Jennifer, and the snow is quickly melting. Today is a walk-the-dog day for sure. The cake was yummy and fairly easy to make, so I definitely recommend you give it a try.

  6. Cake and lemons…meant to be together…I make a recipe of my late Mums where you drizzle the lemon juice with some sugar, through the cake. YUMMO. Why do I not think to make this again..it’s actually something I can eat!! Hope the snow is giving way to…what is meant to constitute Spring weather!!

  7. I feel ya – I thought we were in spring but Mother Nature seems to be very attached to winter. I love baking on cold and rainy days and lemons are my favourite ingredient. I think my favourite lemon recipe is this Lemon Yoghurt Cake – it’s so easy and so delicious! Your pound cake had me drooling!

    1. For today, we are having spring weather, Sammie, and I am savoring every moment–just in case Mother Nature changes her mind again. Lemon yoghurt cake sound intriguing. I’m going to have to check that out. Thanks!

  8. Hi! I’m not a baker at all. Years ago, I might do a batch of cookies or brownies, but now-a-days nothing because hubby is diabetic, and I really do not need to eat a batch of any sweets myself. I’ve found even if I take them to book club, I come home with still half. Oh, I did make a loaf of banana bread when our banana tree ripened up last year. One loaf and froze half of it!

    Of course, spring in Florida has been around for a long bit already. We are having high winds the past couple of days, which is keeping the temps in the low 80s. But the sun is hot already so gardening in the morning hours. We just don’t really have cold and wet here!

    1. I don’t usually bake much either, Pat, except if I have grandchildren over with whom I can send the results home. I am a little jealous of the fact that you don’t have winter to speak of in Florida. I wonder if I would miss the anticipation that comes with the change of seasons though.
